OVEN ROASTED CAULIFLOWER

INGREDIENTS:

Cauliflower------------1

Salt--------------------to taste

Pepper----------------1/2 tsp

Chilli Sauce-----------1 tbp

Lemon juice----------1 tsp

Oil---------------------4 tbp

Minced Garlic----------2 tsp





DIRECTION:

1.Cut the florets from the head and clean them.
2..Preheat the oven to 375 degrees F.
3..In a large bowl, combine all of the ingredients except the garlic.
4. Toss to mix well and place in a large baking dish or shallow roasting pan.
5.Place the pan in the oven and roast the cauliflower, turning once or twice, until tender and caramelized around the edges, 30 to 35 minutes.
6.During the last 5 minutes of cooking, stir the garlic into the pan.
7. Remove the pan from the oven and serve immediately.

POPU/TADKA RICE

INGREDIENTS:

Cooked Rice ------------2 cups of standard measuring cup

Turmeric powder-------1/4 tsp

Oil-----------------------3 tbp

Mustard seeds----------1/2 tsp

Cumin Seeds------------1/2 tsp

Green chillies------------3-4

Urad dal-----------------1 tsp

Channa dal--------------1 tbp

Salt----------------------as required

Curry leaves-------------few



DIRECTIONS:
1.Heat oil in a pan.
2. Add mustard,cumin seeds,urad dal.channa dal once the oil gets heated up.

3.Fry for few mins till the dal gets light brown.


4.Add green chillies and turmeric.

5.Add cooked rice to the oil mixture.

6.Add salt to the rice and mix well.

7.Turn the flame to medium high and let the rice heat up.

8.Remove after its gets hot and serve hot.

MASALA CHAI


Serves: 1 person

INGREDIENTS:

Milk--------------1 cup

Water-------------1/2 cup

Ginger-------------1cm x 1cm piece

Cinnamon----------pinch

Peppercorn--------2

Elaichi-------------2

Sugar--------------as needed

Tea Powder--------1tsp

DIRECTIONS:

1.Take 1/2 cup of water in a vessel.

2.Make powder/paste by crushing pepper,elaichi,ginger.

3.Add the above paste/powder to hot water.

4.Add tea powder and let the water come to boil.

5.Now add milk and let it boil for another 5-6 mins.

6.Add sugar,cinnamon at the end.

7.Pour into serving cups using tea Strainer.

ALOO/POTATO CHIPS

INGREDIENTS:

Potatoes -------------------2 big ones

Oil-------------------------- 2 tsp

Salt-------------------------to taste

Chilli pwder---------------- as required

DIRECTIONS:

1.Wash potatoes and peel the outer skin.

2.Slice the potatoes into thin sliceseither using a knife or slicer.

3.Make sure they are not too thick or uneven.

4.Take little quantity of oil and brush over the plate.

5.Take a microwave safe plate .

6.Place the slices on the plate and brush the other side too with oil.

7.Sprinkle with salt and chilli powder.

8.Place in microwave for 2 mins.

9.Depending upon the thickness of slices cook time can be varied.

10.Turn over the slices and microwave for another 2 mins.

11.Take off the slices from the plate before it cools down or else they stick on to it.

12.Serve as side dish or evening snack.
