OATMEAL APRICOT COOKIES--RM#2

DAY9 OF RM#2

INGREDIENTS:

Oats------------------------------1 cup

Dried Apricots--------------------1/2 to 3/4 cup chopped

Almonds-------------------------1/2 cup chopped

All Purpose Flour-----------------3/4 cup

Sugar----------------------------1/2 cup(i prefer less ,so can add A/c to ur taste)

Baking soda----------------------1/4 tsp

Baking powder-------------------1/2 tsp

Salt------------------------------a big pinch

Melted Butter/Olive oil----------2 tbp

DIRECTIONS:

1.Chop the apricots and almonds into bit site pieces.

2.Mix in all the dry ingredients(4-8),the above chopped apricots,chopped almonds,oats.

3.Combine well and add in oil.Make a slight crumble mixture.

4.Add in some water ..very little enough to make it tight pack..not like a dough.

5.Preheat oven to 325F and place small portions of the mixture onto the greased baking tray.

6. Slightly press them down to make them flat and bake for 10-15 minutes.

7.Remove when the edges turn brown and cool.

i am starting to bake with oats - never used them much - how many cookies did you get? about 20? or lesser?

this recipe seems like it will also make a good short crust pastry minus the nuts and fruits - unless the cookies are soft and chewy
