CRISPY BAKED CHICHEN FILLETS--RM#2

INGREDIENTS:

Boneless Chicken----------10-15 medium sized pieces

Eggs-----------------------2

All purpose flour-----------1/4C or just enough to rollover in

Chilli powder--------------1 tsp

Lemon Juice--------------1/2 cup

Any masala powder-------1/2 tsp(of ur choice or optional)

Pepper--------------------1/4 tsp

Fennel seeds powder------1/2 tsp

Bread crumbs-------------For outer coating(upto ur wish)

Salt-----------------------to taste

Oil------------------------to spray over.

DIRECTIONS:

1.Combine all the ingredients except Oil,Bread Crumbs,Eggs,Flour and mix well.

2.See that the pieces are coated well with the ingredients.Cover and place in refrigerator for an hour.

3.After an hour take Beaten eggs in one bowl,flour in one and bread crumbs in another.

4.Line the baking tray and spray over with oil.Preheat oven to 375F for 3 mins.

5.Start by rolling over all the chicken pieces first in flour to get nicely coated and set aside.

6.Now start with one flour-rolled piece to be dipped nicely in the beaten eggs, followed by rolling up in the bread mixture. Do this one at a time and place evenly spaced on the tray and spray over the oil on the top..

7.Once done with all the pieces(rolling in egg,crumbs) place the tray in oven and bake for 45 mins once turning over once after the first 20 mins.

8.If they start burning out before the time remove,cool for 5 mins and serve.
