ALOO TIKKI

Haaa!!!!Its been a long time that I really missed (my blog)all your colorful ,mouthwatering dishes and your wonderful,encouraging words.It ofcourse is a long break that i enjoyed most, as we made a 15-day trip to the East-Coast for the Christmas-New year Break.Though the season wasnt right to roam around the country it indeed has the most beautiful days in our lives.After getting back to LA i cought hold of Severe Cold.It took me almost 10 days to recover and now am pretty fine.Since am back lets make this year a lot more vibrant!!!Hey Guys missed to wish you all a Happy New Year 2009 and Happy Pongal.

INGREDIENTS:

Potatoes----------------------------3 big ones

Peas--------------------------------1/4 cup

Red Onion finely chopped--------1/4 cup(optional)

Chopped Mint&Cilantro----------1 tsp each finely

Green chillies chopped-----------2-3

Chaat masala,Garam masala-----1/2 tsp each

Red chilli powder----------------1/4 tsp or more

Ginger-Garlic paste--------------1 tsp

Dried Mango Powder------------1/4 tsp

Cumin Powder-------------------1/2 tsp

Bread Crumbs-------------------Enough to coat

Salt------------------------------to taste

Oil-------------------------------For shallow frying

DIRECTIONS:

1.Boil the potatoes till thoroughly cooked and peel,grate them.

2.Add the rest of the ingredients except bread crumbs , oil and mix well.

3.Make small balls and flatten them and make any shapes as you wish.

4.Take bread crumbs in a small plate and roll them over to coat the patties on all sides with them.

5.Heat oil ina pan and fry the flattened balls on both sides till golden brown.

6..Enjoy hot with any mild flavoured sauce.

BREAD CUTLET

This appetizer is something everyone would love to munch upon(especially me:)and quite easy to make.It requires very basic ingredients and yet tastes simple.I would love to thank mahimaa for tempting me with her snap and making me try this again.

INGREDIENTS:


Bread slices-------------------3

Grated Carrot----------------1/2 cup(go with any veggies)

Grated Cauliflower------------1/2 cup

Grated Zucchini--------------1/2 cup

Chopped Onion---------------1/2 cup

Peas--------------------------3 tbp

Paneer-----------------------1/4 cup grated(optional)

Green chilli-------------------2-3

Masala powder---------------1/2tsp(of ur choice)

Garlic------------------------1/2tsp chopped

Turmeric powder-------------1/4 tsp

Coriander leaves--------------3 tbp chopped

Salt---------------------------to taste

Oil----------------------------for shallow frying

DIRECTIONS:

1.Heat oil in a pan. Add chopped green chillies,choppedgarlic,chopped onions.

2.Fry till the onions turn brown.Add on the veggies,peas and fry till half done.

3.Add salt, masala powder,turmeric, grated paneer and keep frrying till they become tender.

4.Turn off and let it cool down.Meanwhile dip the bread pieces in water for 2 secs and take out.

5. Squeeze out the excess water and mix the bread with the fried veggies .

6.See that you are able to form balls and shape them into cutlets.

7.In a tsp of oil shallow fry 2-3 cutlets on a pan on both sides till golden brown.

8.Serve hot with ketchup

ONION PAKODA / FRITTERS--RM#2

DAY5 OF RM#2

INGREDIENTS:

Onions----------------------------2 large ones(Go for Red one's if available)

Besan/Gram flour----------------1-1/2 cups

Rice flour-------------------------1/2 cup

Green chillis----------------------5

Curry leaves----------------------few

Baking soda-----------------------1/4 tsp

Salt------------------------------ as required

Oil--------------------------------for deep frying


DIRECTIONS:


1.Take gram flour,rice flour, salt, soda, green chillis and curry leaves.

2.Combine properly and then add the very thinly sliced(lengthwise) onions.

3.Mix well with hands till u have a crumbly texture.

4. Add very little water(1/4 to 1/2 cup) if you want the pakodas to be hard ,orad more water till you get a thick dosa batter consistency for soft pakodas.

5.Taste the batter for spiciness level and salt.Can add redchilli powder if prefer extra hot.

6.Heat oil in a wide skillet enough for deep frying.Drop small balls to tes the hotness of oil.

7.With your fingers drop the batter in the oil to form small pakodas in batches.

8.Deep fry till they turn golden brown on all sides.Make them in batches.

9.Once done place them on paper towel to absorb excess oil and serve hot.

CHAPATI PIZZA

INGREDIENTS:

Chapati/tortillas------------------------3


Mozarella cheese-----------------------8 oz grated(i used parmesan)

Spagetti sauce--------------------------1/2 cup(can use pizza sauce)

Tomato slices---------------------------3-4

Jalapeno--------------------------------1

Chopped onions-------------------------1/2 cup

Salt-------------------------------------as required

Oregano,basil---------------------------1/2 tsp each

Olive oil---------------------------------2tsp

Bellpepper/meat/pineapple/olive-------optional





DIRECTIONS:

1.Make chapati dough with wheat flour,no salt,tsp sugar and a tsp of oil.Roll out to medium to large size chapati(size of plate u want to bake in.Donot make too thin or too thick)and fry over both sides for 2-3 mins till slightly fried .


2. Grease the plate/pan with oil and spread over the chapati one over the other.

3.Sprinkle a little bit of salt over the top most one and spread with handful cup of cheese then with the sauce. (I didn't use any cheese in between the chapati's...just only over the top one)

4.Again sprinkle over the remaining cheese, tomato slices, chopped onions, jalapenos, toppings, oregano, basil .

5.Atlast sprinkle over again tbp of cheese if required and place in the bottom rack of he oven at 400degreeF .

6.Bake for 10 mins then rotate the chapati to avoid burning at the bottom.bake for another 10-15 mins until the top is slightly browned.

7.When done turn off the oven and keep the door opened and leave pizza in oven until ready to serve.

8.Slice it out and serve when hot.

BROCCOLI 65

INGREDIENTS:


Broccoli Medium-sized Florets------------------5-6 cups

Green Bell pepper------------------------------1 big one

Chilli powder------------------------------------1-1/2 tsp

Green chillies------------------------------------2 slit lenghtwise

Garlic cloves------------------------------------3

Onion-------------------------------------------1 big one

Salt----------------------------------------------as required(can use ajinomoto instead)

Corn startch-------------------------------------5-6 tbp

Soy sauce----------------------------------------2 tsp

Chilli sauce---------------------------------------1 tsp

Tomato sauce------------------------------------2 tsp

Green onions-------------------------------------1 cup chopped

Oil----------------------------------------------for deep frying



DIRECTIONS:


1.Cut the broccoli into small to medium florets of your choice and clean them thoroughly.

2.Soak them in hot water for few mins then drain them out and let it stand till all the water comes out through the colander

3.In a sufficient mixing bowl add corn starch,salt , chilli powder and mix well. Do not add water to it.

4.Just mix in the florets into the starch properly and if needed just sprinkle little water onto it to see hat starch is properly coated.

5.Let it sit for 10 mins.Then heat the oil in a pan and deep fry the starch coated florets till golden brown .

6.First test a small floret for taste then adjust either salt/chillipowder as per your taste.

7.Allow the whole florets to rest on kitchen paper or tissue till the sauce is ready.

8.Add thinly sliced onions to 3 tbp of oil and fry till light brown then add the sliced bellpepper.

9.Once the bellpeppers are slightly done transfer to a seperate bowl and set aside.

10.In the same pan add 2tsp of oil,chopped garlic pods,green onions and saute till fried then turn the heat to low then after a minute add soy sauce,chilli sauce,tomato sauce.

11.Fry for a minute on low heat them add on both onions-bellpepper as well as deep fried florets into the sauce mixture.

12.Turn heat to medium low then kepp sauting for 2-3 mins then turn off.

13.Serve immediately with any dipping sauce........

MIRCHI BAJJI

INGREDIENTS:

Mirchi bajjis/serrano chile----------------10

Peanuts----------------------------------4 tbp

Tamarind Extract------------------------3tbp (has to be thick)

Coriander seeds--------------------------1 tbp

Sesame seeds----------------------------5 tbp

Gram flour/Besan------------------------1-1/2 cups

Redchilli powder-------------------------1/4 tsp

Baking soda------------------------------1/4 tsp

Cumin powder----------------------------1/2 tsp

Vamu/Ajwain----------------------------1/2 tsp

Salt---------------------------------------as required

Oil----------------------------------------for deep frying

DIRECTIONS:


1.Wash and make a vertical slit in the middle from the top to bottom on one side keeping the ends intact.

2.Pluck off the white vein in the middle along with the seeds and place them in water to make sure that all seeds are out.

3.Prepare the rest of chillies this way to be ready for stuffing.

4.Dry roast peanuts,sesame seeds,coriander seeds and grind to a fine powder.

5.Add a little salt,tamarind extract to the powder and make a stiff paste.

6.Fill each chilli slit with some of the above paste and place them aside.

7. Take a medium sized round mixing bowl with salt , rest of ingredients except oil and add water.

8.See that the batter is thick enough to hold it around the chillies.

9.Heat oil in a pan and drop the chillies dipped in batter .

10.Fry till they turn light golden brown ,remove and place on paper towel to absorb oil.

11.Serve with spring onions and chutney on the side.

POTATO/ALOO BAJJI

SERVES:4-5 people

INGREDIENTS:

Medium sized potatoes------------2

Gram flour/besan------------------1-1/2 cup

Red chilli powder-------------------1/2 tsp

Salt----------------------------------as required

Cumin+Coriander powder---------1 tsp

Baking soda-------------------------1/2 tsp

Oil-----------------------------------for deep frying


DIRECTIONS:

1.Clean and peel the skin of potatoes.

2.Slice them into oval/round slices using a potato slicer and place in water.

3.Mix chilli powder,cumin+coriander powder,salt in besan .

4.Make a fine very thick paste with 3/4 cup water for 1 cup besan.

5.Test by dipping a slice in the batter and remove after both sides are thourghly coated on both sides with batter and batter is not dripping off quickly from the slice.

6.Make sure that you donot make it watery.


7.Add soda to the batter and keep aside for 10 mins till the oil is hot enough.

8.When hot enough drop the slices coated both sides with batter into oil.

9.Do this in batches depending on size of ur pan and remove once about to turn light brown.

10.Place on paper towel to remove excess oil from them.

11.Serve with tomato sauce or green chutney.

EGGPLANT/BRINJAL FRY

SERVES:3-4 people

INGREDIENTS:

Eggplant---------------2 long american variety

Turmeric--------------1/4 tsp

Chilli powder-----------1/4 tsp

Pepper pwd------------pinch

Fennel seeds pwd------1/2 tsp

Coriander powder------1/2 tsp

Salt--------------------as required

Lemon juice------------as required

Oil---------------------to pan fry


DIRECTIONS:

1.Clean and slice the eggplant into circular discs.Donot make thick discs.

2.Take a large mixing bowl and add all the ingerdients mentioned above one after another except oil.

3.Mix well so that the spices are evenly distriuted onto the slices.

4.Set aside for 15 mins and then heat a frying pan with abt 6-7 tbp of oil.

5.Fry them in batches tilll both sides are done.

6.Serve hot as a side dish.

FRIED CORN CHIPS

INGREDIENTS:

Corn Tortillas-----------1 packet(contains 12)


Salt---------------------1 tsp


Oil----------------------for deep frying

Water------------------1/2 cup

Chilli powder------------optional to sprinkle

DIRECTIONS:

1.Take a small bowl and mix salt in water.


2.When u taste it it should be too salty.

3.Now dip the baking brush in the salty water and brush the tortilla on both sides.

4.Test this for one small wedge and fry it.When u taste it ,it should be of the exact taste or else add eiher water or salt.

5.Now brush all the tortillas and let them dry.

6.Once dry place them one over the other and cut them into 8 wedges.

7.Heat oil and deep fry them till light brown.

8.Place them on tissue to absorb oil and serve with salsa.

KOFTA BALLS

MAKES: 16 balls

INGREDIENTS:

Potatoes------------2medium

Carrots--------------1

Peas----------------1/2 cup

Paneer cubes -------1 cup

Chilli powder--------1/2 tsp

Garam masala------ 1/4 tsp

Pulao masala--------1/4 tsp

Besan----------------3tbp

All purpose flour------3-4 tsp

Cornstarch----------- 1 tsp

Salt ------------------to taste

Oil------------------- for deep frying




DIRECTIONS:
1.Boil the potatoes,carrots,peas in little water in a pressure cooker.
2.Remove ,drain out the water , peel the skin and let it cool.
3.See that water from the vegetables is not mixed.
4.Mash them and mix all the above ingredients,flours except oil.
5.Make small sized ball with the mashed mixture.Now taste a small ball and adjust the ingredients acordingly.
6.The balls should be tight enough so be sure that u add no water.
7.Coat each ball with some besan flour and drop into hot oil.
8.Fry them till they are golden brown and then place on paper tissue to absorb oil.
9.Serve hot with sauce.

CLASSY CAULIFLOWER SNACK

INGREDIENTS:


Cauliflower--------------1

Yogurt------------------2 tbp

Chilli powder----------1/2 tsp

Cumin powder---------1 tsp

Garlic crushed---------1 tsp

Garlic powder----------to sprinkle

Jalapenos---------------1

Salt---------------------to taste

Lemon Juice----------2 tbp

Soy Sauce-------------1 tsp

Olive oil---------------4 tbp






DIRECTIONS:


1.Cut and soak cauliflower in ice cold water for 30 mins.

2.Mix oil,chilli powder,lemon juice,soy sauce,garlic crushed ,salt and yogurt in a bowl.

3.Remove from water and make them dry.

4.Place cauliflower florets,sliced jalapeno's in a big mixing bowl and pour the mixture over the top.

5.Mix well and refrigerate for 2 hrs minimum, mixing them in between.

6.Place an aluminium foil on the baking plate and spray with cooking oil.

7.Place the cauliflower on the baking plate and place in the preheated oven at 375degrees for30-35 mins.Check in between to see that it does not over -burn.

8.Keep mixing with a fork in between for every 10-15 mins.

9.Remove once cooled and transfer to serving bowl. and sprinkle over the top with garlic powder,few coriander leaves.

CABBAGE VEG SAMOSA

SERVES:makes 16-20

INGREDIENTS:

Potatoes-------------------2


Green peas ----------------1/2 cup

Cabbage--------------------4 cups chopped

Carrot----------------------1

Cumin seeds--------------- 1 tsp

Green chillies---------------4

Turmeric ------------------1/4 tsp

Garam Masala-------------- 1/2 tsp

Baking soda-----------------1/2 tsp

Salt------------------------to taste

Lemon juice-----------------2 tbp

All-purpose flour-----------2 cups

Oil -------------------------for deep-frying











DIRECTIONS:

1.In a pressure cooker , boil potatoes,carrots in water for 1 whistle or until tender.



2.Drain well, peel the skin of potatoe and chop/mash them both of them to small cubes.


3.Dont over mash them.


4. Heat oil in a skillet add cumin seeds, turmeric, green chillies,chopped cabbage.


5.Once te cabbage is completely cooked and dry add mashed mixture,peas,Garam Masala and salt.


5.Cook gently for 5 minutes ,then stir in lemon juice, then mix well, remove from heat and cool.

6.Take flour into a bowl,add salt,baking soda,hot milk and mix to form a stiff dough.


7. Divide into equal pieces and form each piece in a ball and roll each ball on a lightly floured surface to a medium sized circle.


8. Cut each circle in half and place the potato filling equally among semicircles.

9.Dampen edges of semicircle, then fold over and seal to form triangles while enclosing the filling completely.


10. Heat oil in a wide pan and when hot fry samosa in hot oil, a few at a time, 3-4 minutes or until golden brown.



11.Drain on paper towels and serve with sauce.

PANEER TIKKA




This recipe was made in baking oven. The actual way of doin this is to grill the marianted paneer,onions and bell peppers using bamboo skewers.



SERVES: 5 people


INGREDIENTS:

Paneer Indian ----------------500gms

Red Bell Pepper---------------2 small

Green Bell Pepper-------------2 small

Yellow Bell Pepper------------2 small

Red Onions--------------------1 large

Jalepano pepper---------------3-4

Garlic Powder------------------garnish

Lemon juice-------------------1/4 cup

Salt-----------------------------to taste

Oil -----------------------------spay bottle

DIRECTIONS:

OVEN METHOD

1.Cut paneer into small cubes and set aside.

2.slice all the bell peppers,onions .Jalapeno into medium chunks.

3.Now take lemon juice,salt ina large mixing bowl and mix paneer,onions,bell peppers.

4.Refrigerate for an hour.

5.Pre-heat oven to 275F .

6.Spray oil on baking tray and place paneer pieces first.

7.Bake for minimum of 2mins and remove.

8.Now spray some more oil and place Bell peppers,onions,jalapeno and bake for 7-8 mins at 275F.

9.Remove and Mix them all.

10.Serve with garlic powder sprinked over it.



GRILL METHOD


1.Follow steps 1-4 as in oven method.
2.Take wooden skewers and soak them in water for an hour.
3.Dry them and thread bell peppers,jalapenos,onions,paneer ono the skewers.
4.Spray cooking oil and sprinkle with garlic powder.
5.Place on hot BBQ grill for 3-5 mins turning frequently.
6.Serve hot with sauce/chutney.

GOBI/CAULIFLOWER MANCHURIA

INGREDIENTS:

Cauliflower -------------------500gms
Soya Sauce-------------------- 1tsp
Tomato Sauce -----------------2tsp
Chilli Sauce -------------------1tsp
Vinegar------------------------ 1tsp
Flour (Maida/besan) ---------2 tbp
Cornflour---------------------- 2 tbp
Ginger --------------------------1"piece
Garlic cloves cut to small bits--- 2tsp
Red Chilli Powder-------------- 1tbsp
Spring onions-------------------1/4 cup
Salt as--------------------------- required
Pinch of Soda,food color
Oil ------------------------------for frying

DIRECTIONS:

1.Cut cauliflower into small florets and soak in ice-cold water with little salt for 1hr.

2,Take flour in a wide&deep bowl along with cornflour, soda ,chilli powder,salt and mix well with water till required consistency is obtained.

3.Place the cauliflower in this mixture and set aside for 30 mins.

4.Dipped cauliflower are now fried in oil till light brown.

5.Now in a kadai take some oil, mustard seeds.

6.when it crackles add ginger,garlic and stir for few seconds then add onions.

7.When onions become tender add both the sauces, mix well for 2-3 minutes.

8.Mix another teaspoon cornflour separately in water so that there are no lumps put it in the kadai and let it boil.

9.Lastly add the fried cauliflower and little garnish with chopped & fried spring onions and serve with any of your fav sauce.

POTATO FRENCH FRIES



INGREDIENTS:

Potatoes -------------3

Oil --------------------to deep fry

Salt------------------- to taste

Pepper powder------ to taste

Chilli powder-------- to taste

DIRECTIONS:


1.Wash potatoes and peel the skin.

2.Cut them into long pieces with a knife or a slicer.

3.Place them in ice cold water for 30 mins.





4.Heat oil in a pan .

5.Wipe off excess water from the slices.

6.Place the slices in oil and fry for 5 mins.

7.Remove from oil and place on tissue to absorb the oil.

8.Place them back in oil and fry till they start to appear light brown.
9.Repeat the same process again.
10.Now fry till they turn golden brown.
11.place on tissue to remove oil.

12.Sprinkle salt,pepper,chilli powder for taste.
13.Serve with hot sauce or salsa.

OVEN ROASTED CAULIFLOWER

INGREDIENTS:

Cauliflower------------1

Salt--------------------to taste

Pepper----------------1/2 tsp

Chilli Sauce-----------1 tbp

Lemon juice----------1 tsp

Oil---------------------4 tbp

Minced Garlic----------2 tsp





DIRECTION:

1.Cut the florets from the head and clean them.
2..Preheat the oven to 375 degrees F.
3..In a large bowl, combine all of the ingredients except the garlic.
4. Toss to mix well and place in a large baking dish or shallow roasting pan.
5.Place the pan in the oven and roast the cauliflower, turning once or twice, until tender and caramelized around the edges, 30 to 35 minutes.
6.During the last 5 minutes of cooking, stir the garlic into the pan.
7. Remove the pan from the oven and serve immediately.
