EGG PODIMAS --RM#2

INGREDIENTS:

Eggs------------------------------4 to 6

Onion----------------------------1 big one chopped

Green chillies-------------------4-6 chopped

Turmeric powder---------------½ tsp

Garam masala------------------1/2 tsp

Cumin,Coriander pwd---------1 tsp each

Cumin,mustard seeds----------1/2 tsp each

GingerGarlic pst----------------1 tsp

Coriander leaves----------------few

Curry leaves--------------------few

Salt------------------------------to taste

Oil-------------------------------6 tbsp

DIRECTIONS:

1.Heat up a pan with oil and add mustard,cumin seeds.

2.When they start to crackle add curry leaves, green chillies, chopped onions, and a little bit of salt.

3.Sauté till the onions become transparent and then slightly start turning brown.

4.Then add turmeric powder,gingergarlic paste.Sauté for 2-3 mins or till fried. Then add the garam masala,coriander powder and mix well.

5.Now beat all the eggs in and just breakup the yolk a bit.Add in little more salt and let it stand on medium heat uncovered for 8-10 mins.

6.By this time the eggs are cooked almost halfway through and the top is still uncooked.Slightly try to turn the top uncooked portion bottom side by breaking up a little and turning.

7.Now let it again stand undisturbed for 5-7 mins .Then the eggs began to set and gets cooked up to the heat.Stir up a bit breaking them up to egg pieces as you require them to be.

8.Add in cumin powder,coriander leaves and cook for 2-4 mins.Turn off and serve .

BEANS WITH SCRAMBLED EGG

INGREDIENTS:

French beans------------------1 pack

Eggs---------------------------2

Onion--------------------------1 medium one

Cumin powder-----------------1/2 tsp

Coriander powder--------------1tsp
Garam masala-----------------1/4 tsp

Green chillies-------------------5-6

Cumin,mustard seeds----------1/4 tsp each

Methi powder-----------------a pinch

Gingergarlic pste--------------1/2 tsp

Turmeric-----------------------1/4 tsp

Coconut powder---------------1 tsp

Curry leaves-------------------few

Oil,Salt------------------------as required




DIRECTIONS:

1.Wash the beans properly and chop them as desired either straight-cut or slant-cut.Set aside.

2.Heat oil in a deep frying pan and add cumin,mustard seeds,curry leaves and fry till done.

3.Add on very finely chopped onions and cook till they turn slight dark brown.

4.Add in ginger-garlic paste,turmeric,green chillies and cook till raw smell goes off.

5.Now add the chopped beans in and keep sauting regularly on meduim to medium high heat covered.

6.When the beans are completely cooked add cumin powder,coriander powder,garam masala,methi powder.

7.Mix well and fry for 3-5 mins maintaining the same heat.

8.Now beat in the eggs onto the beans mixture.Donot mix too much.Just make sure that all the beans are slightly covered with the egg mixture.

9.Cover and cook till the eggs are cooked.

10.Fry for few more mins and turn off.Garnish with coriander leaves and serve.

EGG PULUSU/STEW

INGREDIENTS:

Eggs----------------------6

Tamarind-----------------1 big lemon size(or 3 -4tbp of tamarind paste)

Onions -------------------1 big one

Green chillis--------------3

Garlic pods----------------3 crushed ones

Coconut powder-----------1/2 tsp

Red chilli powder---------1 tsp

Turmeric pwd------------1/8 tsp

Coriander pwd------------1 tsp

Cumin pwd---------------1/4 tsp

Oil------------------------6tbp

Mustard,cumin seeds-----1/2 tsp each

Curry leaves--------------few

Jaggery/sugar------------1/2 tsp

Coriander leaves--------- for garnish


DIRECTIONS:

1.Boil the eggs in some boiling water for 10 mins.Then place them under cold running water for 2-3 mins.


2.Keep aside for 5 mins till it gets cold.Then it becomes easy to get the egg out of the shells.

3.Make small 3-4 slits along the length of the eggs and fry for 2 mins in a tsp of oil.Then set aside.

4.Heat the oil in a vessel and add mustard seeds,cumin seeds and let them splutter.

5. Now add curry leaves and fry then add garlic and let it fry for 5 seconds.

6.To this add the chopped onions and green chillies and fry till they turn light brown.

7.Now add chilli pwd, turmeric pwd, coriander pwd,coconut powder and cumin pwd, mix well and saute for few seconds.

8.Add the tamarind extract ,2 cups of water,salt,jaggery, and bring to a boil.

9. When the water comes to rapid boil add the boiled/fried eggs and let it cook in for 10 minutes or till you get the required gravy consistency.

10.Garnish with chopped coriander leaves ans serve with steamed rice..

TOMATO OMLETTE CURRY

INGREDIENTS:

Eggs-----------------5

Tomatoes------------2 large

Egg gravy masala----1 tbp

Garam Masala-------1/2 tsp

Coriander powder----1 tsp

Green chillies--------5

Turmeric powder----1/2 tsp

Onions---------------1-1/2 onion.

salt-------------------to taste

oil--------------------to fry

Cumin,Mustard-------1/2 tsp each


DIRECTIONS:


1.Break all the eggs into a bowl and beat well.

2.Heat a pan and fry mustard,cumin seeds in oil.

3.Add chopped onions and green chillies,curry leaves.

4.Fry till they turn translucent and add chopped tomatoes.

5.Let them turn soft.Now add turmeric,garam masala,egg gravy masala,coriander powder and enough salt and set it on low flame.

6.Take another wide pan and add oil.

7.Add the egg mixture to oil and leave on for 2 mins

8.See that it does form medium size pieces.

9.Turn off and transfer to tomatoes mixxture.

10 Once cooked properly serve with hot rice .

TOMATO EGG CURRY

INGREDIENTS:

Eggs-----------------------6

Tomatoes-----------------3

Onions--------------------1 big one

Fennel seeds pwd--------1/4 tsp

Cumin,mustard----------1/4 tsp of each seeds

Chilli powder-------------1/4 tsp

Garam masala------------1/2 tsp

coriander powder---------1 tsp

Oil-------------------------5 tbp

Ginger-garlic pst---------1 tbp

Salt------------------------to taste


DIRECTIONS:
1.Boil the eggs in boiling water for 8-10 mins.
2.Once boiled place them under running cold water to easily remove the shell.
3.Make 2-3 slits with a knife or prick with a fork and keep aside.
4.Heat oil in a pan and add cumin-mustard seeds,fennel seeds,onions.
5.Once the onions are cooked add ginger-garlic paste and then chopped tomatoes and cook till they turn soft and mushy.
6.Pour 1/2 to 3/4th cup of water and add coriander powder,garam masala,chilli
powder,turmeric,salt and mix well.
7.Drop the eggs in boiling gravy and let it cook covered for 10 mins.
8.Turn off when required consistency is obtained and garnish with coriander leaves and serve hot.
