ANGEL COOKIES

Hey guys am back!!!!
I know i've been disappearing for quite a long time....But you know what it is like to spend some quality time with your loved ones.......Ofcourse I was in India for about 2 months..........Oh My!!! I couldnt explain how busy i was for 2 months shopping,attending parties,dinners......I was so spoilt.....

I just dropped by few of ur blogs and i couldt believe i missed them all......

Ok then lets get back to our cooking world....I made these cookies a long time back following the instruction on the back of a Flour Packet...They called them Sugar cookies.....But i'd love to call them the Angel Cookies b'coz they melted so fast in my mouth and looked sooo wonderful like Angel..........I would've done far better(coming to the shape)if i had used shortening,granulated sugar instead of butter,Confectioners sugar....B'coz using butter and regular sugar they melted in the oven and came out pretty flat rather than the cookie look....But heres the original recipe

INGREDIENTS:Yields 3 dozen cookies

All purpose flour-------------1 Cup
Shortening-------------------3/4 Cup
Sugar--------------------------1-1/2 Cup
Salt--------------------------3/4 tsp
Vanilla Extract-------------1 tsp
Roasted nuts-----------------2/3 Cup of ur choice

DIRECTIONS:

1.Preheat Oven to 325 deg. F.

2.Beat shortening & confectioners sugar until light and creamy.

3.Add salt & vanilla & beat to combine.Add flour at low speed, blending just to combine.Stir in nuts.

4.On a lightly floured board, press dough out to approximately 1/4" thickness and Cut out cookies with 1 1/2" round cookie cutter.

5.Place on a tray maintaining some gap.Bake 7-8 minutes. Note: they don't brown, so they will still be white when you pull them out of the oven.

6.Cool them and pop it into your mouth!!!!

ROSEMARY POTATO WEDGES

INGREDIENTS:

Potatoes---------------------------2 big ones
Fresh Rosemary chopped----------1/2 tbp
Chilli Powder-----------------------1 tsp
Pepper Powder---------------------1/4 tsp
Garlic pods crushed-----------------4
Lemon Juice------------------------2 tsp
Oil----------------------------------2 tbp

DIRECTIONS:

1.Preheat oven to 400 degrees and spray a large baking pan with nonstick spray.

2. Mix together rosemary, garlic, chilli powder, pepper, lemon juice, salt to taste and oil in a large bowl.

3. Wash,peel and cut the potatoes into thin wedges and simply toss them in the above mix, to coat evenly.

4. Spread wedges in a single layer about 1/4 inch apart on the prepared baking pan and Bake them turning occationally until tender and crisp, about 30 minutes. Serve immediately.

FRUIT CUSTARD

Great and easy dessert for a huge crowd.
I used Brown & Polson custard powder with vanilla flavor.

INGREDIENTS:

Fat-Free or 2%Milk----------3 Cups
Custard Powder--------------3 tbp dissolved in 1/4 cup of warm milk
Sugar--------------------------6 tbp or more
Dates------------------------10 chopped roughly
Cut Fruits--------------------2 cups(use any variety:Bananas, Apple, Pomegranate, Grapes, Mangos)

DIRECTIONS:

1.Boil 3 cups of milk with sugar on med-low flame in a heavy bottomed vessel. See that the milk doesnot burn at the bottom.

2.When the milk comes to a rolling boil , set the vessel aside off the flame for 2 mins . Now stirring the boiled milk continiuosly pour the custard powder mix slowly.

3.Then immediately put on the flame and let it again come to a slight boil on med-low heat stirring in between.

4.Turn off.Cool down the mixture stirring once in awhile to avoid small custard lumps and chill.

5.Just before serving add in the cut fruits ,dates and Serve.
