CHICKEN WINGS

INGREDIENTS:

Chicken Wings----------------------5-6

Green chillies paste-----------------1tbp

Turmeric powder-------------------1/8tsp

Red chilli powder--------------------1/2tsp

Soy sauce---------------------------1tbp

salt---------------------------------as required

Mustard oil--------------------------3 tbp

Yogurt------------------------------1/2 cup

Fresh Garlic minced-------------------1 tbp

Pepper------------------------------seasoning

Onions------------------------------ 1 /2 cup chopped

Hot sauce----------------------------1tsp

Lemon juice--------------------------1tbp

Vegetable Oil------------------------as required


DIRECTIONS:

1.Clean the wings properly and add yogurt,salt,turmeric,1/2 tsp mustard oil,red chilli powder to it.

2.Mix well and let the wings sit in the yogurt mixture for atleast 3hours in refrigerator.

3.Heat oil in deep-fryer to 300 degrees F on stove.

4.At the same time preheat oven to 400 degrees F.

5.Cook wings in hot oil for 15 minutes, turning occasionally.

6.Drain on a paper towel, then transfer to a baking dish.
7.Broil in the preheated oven for 15 minutes, turning once.

8.Heat 2-1/2tsp mustard oil over medium heat and add onions,hot sauce, garlic, green chilli paste

9. Cook until onions are softened. Season to taste with salt and pepper, and pour over wings, turning to coat.

10. Reduce oven temperature to 350 degrees F and continue baking for an additional 10 minutes.

11.Let cool for 5 minutes, and enjoy with lemon juice on it .

DHAL SAMBAR / PAPPU CHARU

INGREDIENTS:

Tamarind--------------lemon size

Toor dal----------------1/2 cup of standard measuring cup

Carrot------------------1

Brinjal------------------3 round one

Bottle gourd------------10-15 medium sized chunks

Onion-------------------1 big size

Green chillies------------4 slit

Tomato------------------1 big and ripe
Cumin seeds-------------1 tsp
Mustard seeds-----------1/2 tsp

Turmeric-----------------1/4 tsp

Coriander powder--------1 tsp

Methi powder------------1/4 tsp

Curry leaves-------------few

Coriander leaves---------to garnish

Salt----------------------to taste

Oil-----------------------3 tbp
Sugar/Jaggery-----------as required

DIRECTIONS:

1.Soak tamarind in 1 cup hot water and extract tamarind juice.

2.Wash dal and soak in 3 cups of water for 30 mins.

3.Pressure cook the the soaked dal with water.

4.Heat 3 tbp of oil and add Mustard seeds,Cumin Seeds.

5.Add sliced onions,curry leaves and green chillies.

6.Add the cut vegetables(carrots,brinjal,bottle guard) once the onions are tender.

7.Cook for 8-10 mins with lid closed until the bottlegourd is 3/4th done.

8.Add methi powder,coriander powder,turmeric and mix well.

9.Add the extracted 1 cup tamarind water along with 2 cup of plain water.

10.Add salt and adjust accordingly.

11.Close the lid and cook the vegetables till they are tender.

12Once the vegetables are cooked add cooked dal(i usually grind the cooked and cooled dal so that the dal in sambar is smooth not flaky) to it.

13.Mix well and let it boil for 5-8 mins.

14.Once it comes to boil turn off and garnish with coriander leaves.

RAJMA DAL

serves: 6 people

INGREDIENTS:

Rajma(kidney beans)------------1/4 cup of standard measuring cup

Split Moong dal-------------------1/2 cup
of standard measuring cup

Onions----------------------------1/2 chopped

Green chillies----------------------5

Cumin seeds-----------------------1 tsp

Mustard seeds---------------------1/2 tsp

Garlic------------------------------5 pods

Ginger-----------------------------2 inch piece

Coriander powder------------------1 tsp

Garam masala----------------------1/2 tsp

Curry leaves-----------------------5-6

Salt--------------------------------to taste

Oil---------------------------------as required

Red chilllies-----------------------4






DIRECTIONS:

1.Soak rajma in water for minimum of 8 hrs.

2.After 8 hrs soak moong dal and rajma in apresure cooker with 4 cups of water.

3.Add slit green chillies,garam masala,coriander powder,chopped ginger&garlic.

4..Add little salt and cook for 2 whistles.

5.wait till the pressure goes off.

6.Transfer to a serving bowl and add enough salt accordingly.

7.Fry cumin,mustard seeds,redchillies,curry leaves in oil for few mins.

8.Fry onions till they turn translucent and transfer them into dal bowl.

9.Mix well and serve with rice.

POTATO FRENCH FRIES



INGREDIENTS:

Potatoes -------------3

Oil --------------------to deep fry

Salt------------------- to taste

Pepper powder------ to taste

Chilli powder-------- to taste

DIRECTIONS:


1.Wash potatoes and peel the skin.

2.Cut them into long pieces with a knife or a slicer.

3.Place them in ice cold water for 30 mins.





4.Heat oil in a pan .

5.Wipe off excess water from the slices.

6.Place the slices in oil and fry for 5 mins.

7.Remove from oil and place on tissue to absorb the oil.

8.Place them back in oil and fry till they start to appear light brown.
9.Repeat the same process again.
10.Now fry till they turn golden brown.
11.place on tissue to remove oil.

12.Sprinkle salt,pepper,chilli powder for taste.
13.Serve with hot sauce or salsa.

GREEN CHAPATI

INGREDIENTS: makes 10-12

Wheat Flour ------------1 cups of standard measuring cup

Coriander Leaves------- as required

Green Chillies----------- 4-5

Ginger -------------------1/2" piece chopped

Garlic--------------------- 2 pods chopped

Cumin Seeds------------ 1 tbp

Pepper Powder ----------1/2 tsp

Warm Water ------------to make a dough

Salt ----------------------to taste

Oil -----------------------4 tsp

Butter/Ghee------------ for frying

DIRECTIONS:

1.Take Wheat flour,salt,Cumin Seeds,chopped green chillies,Cumin seeds.pepper and Coriander leaves in a wide bowl.

2.Mix them well.
3.Now add 2 tsp of oil to the flour.

4.Add water slowly making a soft dough.

5.Knead he dough for 3 mins and keep aside with 2 tsp of oil on it for 30 mins.
6.After 30 mins knead the dough for approximaely 5-10 mins.

7.The more time & more oil the sofer comes the chapatis.

8.Make equal round balls and roll them out using flour in beween .

9.Place each on a heated frying pan with some butter/ghee.

10.Fry both sides till they appear to be fried.

11.Serve with chutney or curries

SORAKAYA/BOTTLE GUARD WITH MILK CURRY

INGREDIENTS:
Bottle gourd ------------------------1 medium one

Onion -------------------------------1 medium one

Milk ---------------------------------3 tbp

GingerGarlicPst---------------------1 tsp

Turmeric powder-------------------1/4 tsp

Jalapenos--------------------------- 3 or 5-6 green chillies

Dry red Chillies---------------------4

Mustard seeds ---------------------1/2 tsp

Cumin seeds -----------------------1 tsp

Coriander leaves -------------------2-3 tbp chopped + few to garnish

salt ---------------------------------to taste

Oil ----------------------------------3 tbp

DIRECTIONS:
1.Wash,peel,cube into medium sized cubes(donot discard the center) and set aside.

2.Grind Jalapenos,2 tbp of chopped coriander leaves and set aside.

3.Heat oil and add mustard seeds,cumin seeds,turmeric,redchillies and fry for a min.Then add chopped onions and fry till the onions become tender.

4..Add the gingergarlicpst , ground paste and fry till rawness vanishes and add the cubed bottlegourd pieces and let it cook with the lid closed on medium-low heat .

5.Keep sauteing in between .Donot add water.Let it cook in its own steam till they are half cooked.Turn the flame to low.

6.Now add enough salt, 3 tbp of milk , 4-6 tbp of water and mix well.Close the lid and cook on low heat till they are cooked and required consistency is obtained.

7.Turn off and serve hot with rice/roti.

ICECREAM MELODY

INGREDIENTS:

Plain Icecream ----------2 Large scoops of any flavour

Plums -------------------1

PineApple--------------- 5-10 chunks

Mango ------------------5-10 chunks

Cherries----------------- 2-3

Jelly/Jam--------------- 1/2 tsp


DIRECTIONS:

1.Cut the plums into long pieces.

2.Place plums,pineapple chunks,mango chunks in a desert bowl .

3.Decorate them as ur wish.





4.Take two scoops of ice cream and place over the fruits.

5.Decorate the scoops with few chunks and plum piece.

6.Add cherries on the top.

7.Serve with Jelly/Jam

SWEET POTATO COOKIES

INGREDIENTS:

Sweet Potatoes ------------2

All Purpose Flour ---------1 cup of standard measuring cups

Baking Powder------------ 2tsp

Baking Soda--------------- 1tsp

Sugar -----------------------1/2 cup of standard measuring cup

Butter---------------------- 1 stick

Almonds -------------------few tbps chopped(skin removed)

Milk ------------------------1/4 cup of standard measuring cup

Orange Zest/any extract ---1/4 tsp

DIRECTIONS:

1.Wash sweet potatoes and boil in water along with its skin till it becomes tender.

2.Now peel the skin and mash it to a smooth paste.

3. See that there are no potato pieces.

4.Add flour,baking soda,baking powder,orange zest,chopped almonds to potato mash and mix well.

5.In a separate bowl mix melted butter ,sugar and mix it with the flour mixture.

6.Make a soft dough with it.Add milk if required.

7.keep it aside for 30 mins.

8.Now make big balls from the dough and roll them to 1/2 inch thickness adding flour in between.

9.Cut the dough with a biscuit cutter as shown below.
10.Place the biscuits on a greased pan and coat tops with melted butter.

11.Sprinkle with a little bit of sugar on the top.
12.Preheat oven to 450 degrees for 5 mins.

13.Place the baking plate in oven and let it bake for about 15-20 minutes.




14..Watch your oven often to see tat biscuits are not becoming brown too fast.If so lower the temperature.

15.Makes approximately2-1/2 dozen .

SIMPLE PLAIN CAKE

INGREDIENTS:

All purpose flour------------1 cup (Here Cup=1rice cooker cup or 1/2 of standard measuring cup)

Baking powder------------- 1/2 tsp

Baking soda ----------------1/2 tsp

Eggs ------------------------2 large AA size

Vanilla extract -------------1/4 tsp

Butter---------------------- 1/4 cup

Orange zest ----------------1/2 tsp

Sugar -----------------------3/4cup

CashewNuts ---------------1/2 cup



DIRECTIONS:

1.Mix All Purpose Flour,baking powder,Baking soda,orange zest,nuts in a wide bowl.


2.In a separate bowl mix melted butter,sugar together and mix well with eggs.

3.Now add vanila extarct to the wet mixture ie egg bowl.

4.Now mix both the wet(egg) and dry(flour) mixture bowls together .

5.If the mixture isnt thin enough like a paste then add milk till it becomes likewise.

6.Transfer the mixture to an oven safe baking bowl greased with butter to avoid burning.

7.Preheat the oven to 375 degrees for 5 mins.

8. Place the bowl in oven and let it bake for 20 mins at 375 degrees.

9.Check with aknife /fork . See tat it comes out without any paste after plukin in the cake ,Else bake for some time.

10Transfer to a plate by reversing the bowl so tat it falls onto the plate.

11. If u wish u can decorate the cake with icing cream.
